Delicious bacon cheddar potato skins with a creamy 'sour-cream & chive filling'.
"Quick, easy and tasty! Just the way we like it. I popped them back in the oven once I'd filled the skins. This worked really well. Great recipe and the kids loved it."- Skinnycook130

Bake Potatoes at 350 degrees until soft. Remove, cut in half and hollow out potatoes.
In a separate bowl mix together:
Shredded Cheddar Cheese
and salt and pepper to taste
Add a splash of ranch or milk to make the mixture more moist and creamy (not runny)
Put a small layer of filling back into the potato skins, top with cooked bacon and shredded colby, jack and cheddar.
Place potato skins on a cookie sheet and cook at 350 degrees until the cheese bubbles on top. Remove and top with sour cream and chives. Or add a side of ranch.
