this is a family favorite. I "" around the poppy seed because rarely do I remember to put them in. Its good with or without them.
-Boil breasts of chicken until cooked all the way through(20-25 min)
-remove from hot water and let cool down (until easy to touch)
-Preheat oven to 350
-optional: start cooking white rice on stove top here
BOTTOM LAYER
-shred or cut breast into small pieces and put into a big bowl ( typically shred with my hands)
-add sour cream, cream of chicken soup, and poppy seeds to the shredded chicken and mix (typically I do with hands but can also can be done with a spoon)
-add to bottom of a 2 qt casserole dish
TOP LAYER
-melt butter/marg
-crumble Ritz crackers(you can do this in the sleeve before you open it or roll them out)
-mix butter/marg & crackers
-sprinkle over top
-put on middle rack of oven for 20-25 minutes ~~at; 350 degrees (you will know its done when the sauce starts bubbling and the cracker topping is a darker brown)
Enjoy!!!! Usually is served over white rice
