This was very good, you can make your own meat balls or use a store brought brand. I served these with roasted broccoli and cauliflower with butter and lemon zest and put them all around the rice and meatball mixture. Husband loved it and had seconds and told me to make this again.

Original recipe makes 4 Servings
15 Frozen meatballs; (Costco) or your own recipe
1/2 onion; chopped 1/2 inch pieces
2 green bell peppers; chopped in 1/2 inch pieces
2 carrots; cut in 1/2 inch on the diagonal
4 green onions cut short diagonal pieces
1 canpineapple chunks; drained (13 oz can)
Dash; crushed red peppers
Sauce:
1/2 cupBrown sugar
2 T.cornstarch or more if needed
Drained; pineapple juice
1/3 cupCider vinegar
1 tablespoonSoy sauce
1 tablespoonteriayaki sauce
1 tablespoonsake
2 cupscooked basmati rice

Szechwan Sweet and Sour Meatballs Preparation

Micro your frozen meatballs for a few minutes just to heat them through.

Heat your sauce ingredients in a pan, do not boil, just bring to a light simmer, add carrots, onion, and bell pepper, heat for 5 minutes, after 5 minutes, take your corn starch and mix it with 3 tablespoons of cold water and whisk with a fork, add it to the sauce and veggies until thickened.

Add this sauce to your meatballs in an oven proof glass pan, and add pineapple, heat in a 350 oven for 20 minutes, then take out and add your green onion and crushed red pepper, mix all together and pour it over rice.

I cut my green onions on the diagonal then slice them again to get a thin diagonal cut.
