Original recipe makes 4 Servings
1 bottleYellow Curry Sauce from Trader Joe's
2 chicken breasts; boneless & skinless
1 cancrushed pineapple; 6 oz. can
2 tbsp. creamy peanut butter
1/2 cupcashew bits
1 bunchgreen onions
2 cupsbroccoli florets
1 bunchCilantro
1 Lime juice; just a dash
4 cupsRice; cooked

Yellow Curry Thai Chicken Preparation

Cut the chicken breasts into 1" cubes and pan fry them until cooked through. Be careful not to over cook. Throw in the broccoli florets and let them steam for about 3 minutes. Add the Trader Joe's Yellow Curry Sauce and stir. Simmer for about 5 minutes. I add a little water to the empty jar and shake it to get the excess out and then pour that in as well. When you add the peanut butter it will thicken back up.

Add the can of crushed pineapple, the peanut butter and the cashew bits and stir. Let simmer for about 5 minutes. Add the green onions and cilantro and a dash of lime juice and stir. Remove from heat and let sit for about 5 minutes to thicken. Serve over cooked rice.

I usually adjust this recipe a little depending on my mood. If you want it to be a little thicker, add more peanut butter. I also don't always add the lime juice. You can also add more chicken or broccoli or less if you like. It really is an easy recipe that can be tweaked a lot. And you can substitute in the Red Curry Sauce. Enjoy! [I posted this recipe.]
