Guacamole-lightened
Traditional guacamole is a staple with many Mexican meals, but unfortunately is usually high in fat. This lower fat version replaces some of the avocado with tomatillos, which significantly lowers the fat. Serve this low fat version as you would any other guacamole, with tortilla chips and other Mexican dishes.

| 4 Tomatillos; peeled and rinsed |
| 1/4 mediumOnion; coarsely chopped |
| 1/4 cupFresh cilantro; coarsely chopped |
| 2 Jalapeno chili; seeded |
| 1 cloveGarlic |
| 2 smallAvocado; peeled and pitted |
| 1 Tomato; chopped |
| 1 tablespoonLime juice |
| Salt |
| Black Pepper; freshly ground |
Guacamole-lightened Preparation
In a food processor or blender, combine the tomatillos, onions, cilantro, chile peppers, and garlic. Puree until smooth. Add the avocados; puree.
Transfer to a medium serving bowl. Stir in the tomatoes and lime juice. Season with salt and black pepper.
