Sundried Tomato Pan Roasted Chicken

Original recipe makes 2 Servings
4 piecesChicken Thighs; skinned & cleaned
4 Shallots; sliced
4 clovesGarlic; sliced
3 tbspSundried Tomato; diced
1 tbspFresh Thyme
1 pinchBlack pepper
3 pinchesSea salt; to taste
1 tspChef's Shake Blend
1 tbspOlive oil

Sundried Tomato Pan Roasted Chicken Preparation

Clean chicken thighs of fat and skin and sprinkle both sides with some Chef's Shake Blend, some sea salt to taste, and of course some freshly ground pepper.

Use a 3 quart sauce pan, add shallots, garlic, fresh thyme, sundried tomatoes and olive oil and heat on medium - high for 3 -5 minutes. Reduce to medium.

Now move golden brown mixture to one side of the pan and place chicken in pan, then covering chicken with onions and sundried tomatoes. Cook on medium for 5 minutes on each side - turn on high for 30 seconds, cover and turn off for 10 minutes.

Serve with steamed broccoli and enjoy!
