Original recipe makes 12 Servings
3 chicken breasts; boneless and skinless
2 tablespoonspoultry seasoning
1/4 poundangel hair pasta; just a handful
8 ouncessour cream
1 cancream of chicken soup
1 1/2 rolls Ritz crackers
1 stickButter
2 tablespoonspoppyseeds

Poppyseed Chicken Casserole Preparation

Cut the chicken into 1-inch cubes and season with the poultry seasoning. Pan fry until cooked through.

Cook angel hair pasta noodles according to instructions on box.

In a separate bowl, combine sour cream and cream of chicken soup and mix until blended. Add the cooked chicken and cooked pasta and stir until coated. Pour this mixture into a casserole dish.

Melt one stick of butter. Take a roll and a half of Ritz crackers and crumble. Mix butter, Ritz cracker pieces and poppyseeds until the crackers take on a wet appearance. Spread evenly on top of chicken mixture.

Preheat oven to 350 degrees Fahrenheit and bake for 30 minutes.

I made this for dinner one night and it was very good. I would put some salt with it and no poultry seasoning though.

I usually break the pasta noodles in half before cooking them. It makes the finished casserole easier to serve and eat. Also, I sometimes just buy a bag of Tyson's frozen roasted chicken breast pieces and use those instead of cooking 3 chicken breasts. It seems to be just as good and saves a little time. [I posted this recipe.]
