Cut the chicken into 1-inch cubes and season with the poultry seasoning. Pan fry until cooked through.
Cook angel hair pasta noodles according to instructions on box.
In a separate bowl, combine sour cream and cream of chicken soup and mix until blended. Add the cooked chicken and cooked pasta and stir until coated. Pour this mixture into a casserole dish.
Melt one stick of butter. Take a roll and a half of Ritz crackers and crumble. Mix butter, Ritz cracker pieces and poppyseeds until the crackers take on a wet appearance. Spread evenly on top of chicken mixture.
Preheat oven to 350 degrees Fahrenheit and bake for 30 minutes.

beberogers 3 years agoI usually break the pasta noodles in half before cooking them. It makes the finished casserole easier to serve and eat. Also, I sometimes just buy a bag of Tyson's frozen roasted chicken breast pieces and use those instead of cooking 3 chicken breasts. It seems to be just as good and saves a little time. [I posted this recipe.]
