Ingredients

2 cups Flour gluten free
3/4 teaspoon Baking Powder
1 teaspoon Baking soda
1/2 teaspoon Salt
1 1/2 cups sugar
1/2 cup Coconut oil
2 Eggs
1 cup Bananas; mashed
1 teaspoon Vanilla
1/4 cup Yogurt
1 teaspoon xanthan gum
1 cup Walnuts

Original recipe makes 24 Servings

Preparation

Cream the sugar and coconut oil and eggs together until light and fluffy. Add the bananas (usually around 3), vanilla and yogurt (can be milk with a little bit of vinegar or lemon). Add the flour mixture and beat lightly until just mixed. Add nuts if desired. Pour into lined muffin tins. Makes about 24 muffins. Bake for 30 miniutes ata 350 degres.
