Original recipe makes 14 Servings
1/2 poundboneless beef top round steak; cut into strips
1/4 poundboneless skinless chicken breast; cut into strips
2-3 tablespoons canola oil
1 green pepper; thinly sliced
1 sweet red pepper; thinly sliced
2 smallonions; thinly sliced
3 mediumtomatoes; cut into wedges
2 teaspoonchili powder
1 teaspoonSalt
1 canrefried beans
1/2 cupshredded mozzarella cheese
14 flour tortillas; warmed
lettuce; sour cream, and salsa; optional

Hearty Fajitas Preparation

In a large skillet, stir fry steak and chicken in canola oil. Add peppers, onions, tomatoes, chili powder and salt. Cook until meat juices run clear and vegetables are crisp tender. Meanwhile, cook refried beans and cheese until cheese is melted. Spoon over tortillas; top with steak/chicken mixture. Top with lettuce, sour cream and salsa, if desired.
