Great simple quick, try with spicy taco seasoning or hot salsa
- Heat oil in a large skillet on med-high
- Add chicken, cook and stir until cooked through
- Add water, salsa, and seasoning mix, stir, boil
- Stir in rice, cover
- Cook on low heat 5 mins (will look soupy but will get thicker)
- Put mixture in tortillas and add toppings
