Light tasting even with all that bacon

"This literally couldn't be easier. I add whatever veg is in the fridge. I've made it with broccoli, peas and this evening I even threw in a bit of cauliflower I wanted to use up. I also add a bit of oregano or chilli sometimes just to mix it up. My kids love it and it's so easy!" - gingeryank

Original recipe makes 6 Servings
12 ouncePasta; rotini or bowtie
1/2 poundBacon; chopped
2 tablespoonBacon grease; reserved
1 mediumOnion; chopped
6 clovesGarlic; minced
3 mediumZucchini; halved and sliced
1/2 teaspoonSalt
3 tablespoonLemon juice
1/4 cupParmesan cheese; grated

Zucchini and Bacon Pasta (5) Preparation

- Cook bacon until crisp

- Remove and discard all but 2 T of grease

- Saute onion on medium high in drippings until golden brown.

- Add zucchini, garlic and salt, cook until tender

- Boil pasta

- Add pasta to zucchini mixture

- Add lemon juice and bacon and toss

- Sprinkle with cheese
