Chipotle Beef Jerky

I adapted this from a recipe I found online some years ago, and it's been my favorite ever since. The chipotle peppers give it a hot smokey flavor, while the brown sugar keeps it sweet. We bring this along on all of our outdoor trips.

Original recipe makes 100 Servings
5 lb.top round of beef
2 cupssoy sauce
2 cupsWorcestershire sauce
1 canchipotle in adobo sauce; pureed in blender
1 cupbrown sugar
2 Tbsp. granulated garlic
2 Tbsp. granulated onion
1/2 Tbsp. jalapeƱo powder
1/2 Tbsp. ground cumin
1/2 Tbsp. coriander
1 Tbsp. ancho chile pepper
1 Tbsp. cracked black pepper
1 Tbsp. crushed red pepper
1 Tbsp. salt
3 cupswater
2 oz.barbecue sauce

Chipotle Beef Jerky Preparation

Trim and clean beef. Place in freezer until barely frozen to facilitate slicing. Slice 1/8-inch thick with a knife or slicer. Combine all in the ingredients in a large bowl. Add the thinly sliced meat and marinate for 2-3 hours minutes. Remove the meat and place in a dehydrator. Cook at 180 to 200 degrees until done (crispy). Place the dried jerky into zippered plastic bags

I swap the brown sugar out with Splenda Brown Sugar to keep the calories low. You can find the chipotle in adobo sauce in the Mexican section of your grocery store. (At least you can in Texas) [I posted this recipe.]
