Chipotle Beef Jerky
I adapted this from a recipe I found online some years ago, and it's been my favorite ever since. The chipotle peppers give it a hot smokey flavor, while the brown sugar keeps it sweet. We bring this along on all of our outdoor trips.

Ingredients
| 5 lb.top round of beef |
| 2 cupssoy sauce |
| 2 cupsWorcestershire sauce |
| 1 canchipotle in adobo sauce; pureed in blender |
| 1 cupbrown sugar |
| 2 Tbsp. granulated garlic |
| 2 Tbsp. granulated onion |
| 1/2 Tbsp. jalapeƱo powder |
| 1/2 Tbsp. ground cumin |
| 1/2 Tbsp. coriander |
| 1 Tbsp. ancho chile pepper |
| 1 Tbsp. cracked black pepper |
| 1 Tbsp. crushed red pepper |
| 1 Tbsp. salt |
| 3 cupswater |
| 2 oz.barbecue sauce |
Chipotle Beef Jerky Preparation
Trim and clean beef. Place in freezer until barely frozen to facilitate slicing. Slice 1/8-inch thick with a knife or slicer. Combine all in the ingredients in a large bowl. Add the thinly sliced meat and marinate for 2-3 hours minutes. Remove the meat and place in a dehydrator. Cook at 180 to 200 degrees until done (crispy). Place the dried jerky into zippered plastic bags
