Slow Cooker Meatloaf

Original recipe makes 8 Servings
2 poundslean ground beef
1 onion
1 Green Pepper
0.5 cupsbread crumbs; may sub quick oats
1 teaspoonSalt
0.5 teaspoonblack pepper
0.5 teaspoonpaprika
2 Eggs
0.25 milk
1 teaspoonItalian seasoning
1/3 cupmozzarella; shredded
1/3 cupswiss; shredded or diced
0.5 cupParmesan cheese

3 Cheese Meatloaf Preparation

Fold 2 foot piece of aluminum foil lengthwise in half twice. Place on bottom and up sides on slow cooker.

Combine beef, onion, pepper, crumbs, salt, pepper, paprika, mixing well. Combine eggs and milk, then add to beef mixture. Add italian seasoning, mozzarella, swiss, parmesan. Blend well, then press into slow cooker. Tuck foil under lid and cook on low 8-10 hours or High 4-6 hours.

    This was a little weird. I expect meatloaf to have some tomato flavor and this didn't. The main flavor was the cooked cheddar cheese. We enjoyed it but I don't know that I will make it again. We didn't even eat the leftovers.

    Will definitely make again. I used ground turkey & made beef gravy on the side. Next time I will add either beef bouillon or dry beef soup mix just for some added beef flavor but all in all very good.
