Kid's Easy Crispy Fish Sticks
This is an easy recipe for kid's to try when learning how to cook. Kids can do most of the work, with just a little help and supervision from an adult. These oven-baked fish sticks are healthier than fried and just as crisp and delicious.

| 6 tablespoonReduced-fat mayonnaise |
| 1 tablespoonwater |
| 1 teaspoonLemon Rind; grated |
| 1 1/2 teaspoonFresh Lemon Juice |
| 1 1/2 poundGrouper or other firm white fish fillets |
| Vegetable cooking spray |
| Ketchup; , (optional) |
| -- Quick and Easy Tartar Sauce -- |
| 1 cupReduced-fat mayonnaise |
| 1/4 cupSweet or dill pickle relish |
| 1/2 teaspoonGrated lemon rind; , (optional) |
| 2 tablespoonFresh Lemon Juice |
Kid's Easy Crispy Fish Sticks Preparation
Make Tartar Sauce:
Child: Stir together all ingredients in a small bowl until blended. Cover and chill in rerigerator up to 1 week. Makes 1 1/4 cups sauce.
Make Fish Sticks:
Child: Preheat oven to 425 deg F.
Child: Place bread in the container of a food processor; top with cover. Process 30 seconds or until breadcrumbs are fine. Turn breadcrumbs out into a shallow dish. Stir together mayonnaise and next 3 ingredients in a shallow bowl.
Adult: Cut fish into 1-inch-thick strips.
Child: Dip fish in mayonnaise mixture, and roll in breadcrumbs. Place fish on a big baking sheet coatd with cooking spray.
Adult: Bake at 425 deg F for 25 minutes or until fish is golden and flakes with a fork. Remove baking sheet from the oven using oven mitts. Serve with Quick and Easy Tartar Sauce and/or ketchup.
