Turmeric, paprika, chilli and cumin combine to give this light fish dish a mild golden spicy coating.

Cajun fish fillets Preparation
1. Preheat the oven to 200 degrees C and line a baking tray with greaseproof paper.
2. Place the milk in a small bowl and combine the spices on a plate.
3. Dip the fish fillets into the milk, then roll in the mixed spices.
4. Heat the oil in a frying pan over a high heat. Rapidly fry the fish for 2 minutes on each side, or until golden. Place the fillets on the prepared baking tray and bake for 5 minutes.
