Basic Spicy Hearty Soup Preparation

Bring broth to a boil and add all ingredients except for broccoli. Let simmer for 20-30 minutes, until potatoes are cooked well. If you want thicker soup that is not as chunky, continue to cook until potatoes are almost falling apart. Add broccoli and cooked meat(s) if you like, and boil until broccoli is cooked to your liking.

Also of note: I have noticed this recipe, as with most, seems to taste better with fresh ingredients from your local farmer's market. I recently made this with frozen/canned ingredients, and it tasted aweful! It also seems to taste better if you are used to eating healthier foods. If your diet consists of a lot of take-out or fast-food, this recipe lacks the sugar you are used to eating in your meals.

For me this combination of vegetables and spices just didn't seem to work. I managed a couple of bowls but ended up throwing it away. I made the soup a second time to make sure I had made it right but it still got the thumbs down. Sorry.

You can make the following soups by using these simple changes: For Chicken Noodle soup: Add chopped roasted chicken and noodles with broccoli. For Egg Drop soup: Make Chicken noodle Soup and when soup is done, cut the heat, but do not remove from stove. Whisk 3 or 4 eggs, then slowly stir soup in one direction (clockwise or counterclockwise). When soup is all moving the same direction, very (very!) slowly pour in whisked eggs, a little at a time. It should take about 2 minutes to add all the egg. For Vegan soup: Use vegetable broth. Add snow peas, vegan pasta, peas, and tempeh with the broccoli. For Chorizo soup (My personal favorite!): Cook chorizo in pan. Add chorizo and sauce from pan with the broccoli. For Shrimp soup: After cooking the soup, cut heat and add shrimp. Shrimp will be pink all over when fully cooked, after about 2 minutes. [I posted this recipe.]
