Original recipe makes 1 Serving
1/4 shredded chedder cheese
2 strips ofcooked bacon; chopped
2 cooked breakfast sausages; 1 inch slices
1 largebaked potato; 1/2 inch cubes
2 Eggs; beaten
onion powder; 1/2 teaspoon or adjust to your tast
Seasoning salt; 1/2 teaspoon or adjust to your to
2 tablespoonVegetable oil

Hardy Skillet Breakfast Preparation

Fry or nuke bacon and sausages and keep warm; slice and chop before adding to skillet at final preparation. Heat skillet and add 1 1/2 tablespoon of oil. Add the cubed potatoes and brown adding onion powder and seasoning salt. Remove from skillet and keep warm. Wipe out skillet or use another and heat adding remaining oil. Add eggs, scrambling them as they cook. Turn off heat and toss in potatoes, chopped bacon and sliced sausages with scrambles eggs. Top with shredded cheese and cover for 1 or 2 minutes and serve with sour cream and salsa on the side and toast.

* Note: This works well using the large cubed hash browns
