Shrimp Creole (TxCoop6-09)
Original recipe makes 4 Servings
| 1 tblsolive oil |
| 1 lg onion; diced |
| 1 lg green bell pepper; diced |
| 4 stalksCelery; chopped |
| 2 clovesGarlic; minced |
| 1 1/2 lbsshrimp; peeled and deveined |
| 1 candiced tomatoes and green chilies; 10 oz |
| 2 fresh Roma tomatoes; finely diced |
| 1 cantomato paste; 6 oz |
| 3/4 cupchicken or pork broth |
| 1 tspred pepper |
| 1 tsponion powder |
| 1 tspgarlic powder |
| salt and pepper to taste |
Shrimp Creole (TxCoop6-09) Preparation
Heat olive oil in large saute pan over mediom heat. Add onion, bell pepper and celery and cook until tender, about 5 minutes. Add garlic and cook a minute or two longer. Add shrimp, tomatoes and chilies, and diced Romas and stir well. Reduce heat to simmer; add tomato paste to broth, mix well and add to pan. Add seasonings and cook, stirring often, until shrimp are firm and sauce begins to thicken. Serve over rice.
