This overnight marinade recipe gives the pork tenderloin plenty of flavor and the apple jelly glaze puts it over the top.
1. Rub meat with the mustard powder and thyme to taste. Place in a glass baking dish, or other non reactive dish, or a large zipper locked sandwich bag.
2. In a separate bowl mix 1/2 cup sherry, 1/2 cup soy sauce, the garlic and the ginger.
3. Pour over the pork to coat well. Cover and refrigerate overnight.
4. Rotate the meat 1/2 way through the marinading process, if you have a chance to do so.
5. Preheat oven to 325 degrees F (165 degrees C).
6. Bake at 325 degrees F (165 degrees C) for 40 minutes per pound, or until internal temperature reaches 155 degrees F (70 degrees C). Baste the pork or flip it over occasionally while cooking. After the internal temperature reaches 155 you can remove the pork from the oven and let it rest 5 minutes so that it finishes cooking.
7. Meanwhile, heat the apple jelly in a small saucepan over medium heat. Add 2 tablespoons sherry and 1 tablespoon soy sauce, stir well, reduce heat to low and let simmer. Pour over the tenderloin when it's done.
