A great use for leftover crawfish from a crawfish boil.
Slice the French bread in half lengthwise. Hollow out both sides of each loaf.
In saucepan, melt butter on low heat and stir in onion and spices. Simmer about 5 minutes.
Add crawfish and olives. Cook 5 minutes or until crawfish is hot.
Add mayonnaise and dry mustard. Mix well. Gently stir in cheeses.
Fill hollowed out bottoms of each loaf with mix, put tops back on bread. Baste outside with melted butter.
Wrap each loaf in aluminum foil. Bake at 400 degrees for 30 minutes.
