Steak Pinwheels with Sun-Dried Tomato Stuffing Preparation
1. Bring broth, sun-dried tomatoes, and butter to a boil in a medium saucepan. Stir in contents of stuffing mix pouch. Cover saucepan and remove from heat. Let stand for 5 minutes. Fluff stuffing with fork and set aside to cool.
2. Preheat oven to 425 degrees F. Lay steak flat and sprinkle with salt and pepper. Cover steak evenly with stuffing mixture. Roll up steak lengthwise to create a pinwheel effect, enclosing stuffing completely. Skewer seam with toothpicks (too keep them from burning soak them in water for about 20 minutes first). Place the steak roll, seam side down, onto a foil-covered baking sheet. Sprinkle roll with more salt and pepper. Roast until steak is golden brown and cooked through. About 40 mintues.
