Original recipe makes 4 Servings
1 poundrefrigerated pizza dough
1 cupricotta
1 cupMozzarella; grated
1/4 cupParmesan cheese; grated
5 cupsspinach; stems removed & chopped (optional)
Black pepper
2 tablespoonsolive oil
1 cupmarinara sauce

Three Cheese Calzones Preparation

Preheat oven to 400 F. On a lightly floured surface, divide the dough into 4 equal portions, and roll and stretch them into 8-inch rounds.

In a large bowl, combine ricotta, mozzarella, parmesan, spinach, and 1/4 teaspoon pepper. Spoon cheese mixture onto one side of each round of dough. Fold the dough over the filling and pinch the edges to seal. Brush the tops of calzones with oil.

Transfer to a parchment lined baking sheet & bake until golden, 12-15 minutes.
