Lime Grilled Chicken with Kiwi-Papaya Salsa Preparation
Heat grill in shallow dish. Combine lime peel, salt, pepper, and oil. Mix well.
In medium bowl, combine lime juice and honey; mix well.
Pour half of lime-honey mixture into oil mixture in shallow dish. Stir to blend. Reserve remaining lime-honey mix for salsa.
Add chicken breasts (halved) to mixture in shallow dish and let stand at room temperature for 20 minutes. Turn once.
Add Kiwi, papaya, onion, and cilantro to reserved lime-honey mix and stir.
Place chicken on gas grill over medium heat 4-6 inches from heat. Cook 10-15 minutes, or until chicken is fork tender and juices run clear. Recommend turning chicken every 3-4 minutes to keep from burning.
