Actual cooking time is 15-17 minutes. Pre-measuring, chopping, and having all ingredients ready to go makes this an enjoyable meal to throw together. Especially like it with fettucine, but can be served over any favorite pasta or rice.
Put shrimp in a small bowl and season with garlic pepper and toss.
Lightly mist a heated pan with olive oil. Add butter, scallions, red pepper flakes, and garlic and saute over med heat. (about 3-4 minutes)
When scallions become translucent, add the seasoned shrimp and cook until shrimp is pink...(about 2-3 minutes) Remove shrimp and set aside. Add tomatoes, spinach, lemon juice and salt. Reduce on medium low temp for 5-10 minutes. Return shrimp to skillet and stir to coat in sauce. Remove from heat and serve, Good over pasta or rice of choice.
