This is a yummy, quick bruschetta. I always have to make a double recipe because it gets gobbled up so fast!

Original recipe makes 20 Servings
1 loaffrench bread
olive oil
Italian seasoning
grated Parmesan cheese
1 canItalian diced tomatoes; 14.5 oz.
1 packagefresh mozzarella; 8 oz., diced into 1/2" pieces

Super Simple Mozzerella Bruschetta Preparation

Preheat oven to 350 F. Slice french bread loaf into 1 inch thick slices and arrange on baking sheet. Drizzle (do not soak) slices with olive oil. Sprinkle bread lightly with both Italian seasoning and Parmesan cheese. Place in top half of oven for about 10 minutes or until golden brown. Meanwhile, in medium bowl mix tomatoes and mozzarella. Right before serving, arrange browned bread slices on platter and top with tomato/cheese mixture.

I use fresh mozzarella pearls to avoid having to dice it, but any fresh mozzarella can be used. Also, be sure not to top bread slices with mix too early otherwise they become soggy. I also usually let the guests top their own bread straight from the bowl. It quickly becomes the gathering place! Enjoy [I posted this recipe.]
