Crock Pot Chicken and Beans

Ready in 5 hours

Cooks all day, smells great, and is very satisfying.

"Love this recipe-the house smelled amazing when I came home from work. Spices on point, meat tender. Served over rice. House of 4 boys and me barely any leftovers....will defiantly be a go to meal."

Ingredients

Are you making this?
2 boneless chicken breasts; more if needed
1 bag of dry beans; pinto or black
1 box chicken broth; 32 oz.
1 packet taco seasoning
1 can tomatoes; however you like them! diced, chopped, whole
1 onion; small, chopped or diced

Preparation

Rinse and drain beans - pick through and discard out any clumps of dirt or broken beans.

Rinse chicken breasts. Add beans, uncooked chicken, tomatoes with juice, box of broth, onion, and taco seasoning. Mix together. Allow crock pot to cook all day. The beans will be soft and the chicken will be tender and ready to shred with two forks. I cook rice on the side and served the chicken and black beans over the rice, topping with various things like cilantro, avocado slices, pico, etc.

My husband & 8 yr old daughter enjoyed this, which surprised me only because they are not bean fans. I will make again with less beans, more seasonings and a shorter cook time (I cooked it for 88hrs)

Made this with black beans . Had good flavor but we used it to make burritos with cheese and sourcream. Would make this again

This was okay. It needs something though. I added shredded cheese and salsa, but it was still a little bland. My two year old ate it though, so that's always a plus. I think that if you rolled this filling into tortillas, covered it with enchilada sauce and cheese and baked it, and then serve it with sour cream, it would be fantastic. I'll try that next time. The plus was that is was super easy to make, and it was mild enough to serve to the kids.
