| 4 cupsBaby spinach; prewashed, remove stems |
| 4 ouncesMushrooms; Baby Bella |
| 2 slicesTurkey bacon |
| 2 tablespoonsOlive oil |
| 1/3 cupBalsamic vinegar |
| 1/4 cupSplenda sugar substitute |
| 1/4 teaspoonGarlic powder |
| 1/2 teaspoonOnion powder |
Spinach Salad with Hot Bacon Dressing Preparation
Prepare baby spinach in salad bowl
Saute mushrooms in small frying pan coated with trace of olive oil, set aside.
Prepare the bacon, break into small pieces
Add rest of olive oil and Bacos to pan, heat on medium heat until oil is hot
Add balsamic vinegar, Splenda, garlic powder and onion power.
Bring mixture to a boil and reduce by half, stirring frequently.
Pour dressing over salad and toss. Add mushrooms and bacon.
Microwave for 30 seconds to further wilt spinach
Serve immediately

I mixed all of the ingredients in the skillet (the spinach last, of course) to wilt it and coat it nicely with the dressing. Garnished with hard boiled egg for extra protein.
