Ingredients

Are you making this? 
4 cups Baby spinach; prewashed, remove stems
4 ounces Mushrooms; Baby Bella
2 slices Turkey bacon
2 tablespoons Olive oil
1/3 cup Balsamic vinegar
1/4 cup Splenda sugar substitute
1/4 teaspoon Garlic powder
1/2 teaspoon Onion powder

Preparation

Prepare baby spinach in salad bowl

Saute mushrooms in small frying pan coated with trace of olive oil, set aside.

Prepare the bacon, break into small pieces

Add rest of olive oil and Bacos to pan, heat on medium heat until oil is hot

Add balsamic vinegar, Splenda, garlic powder and onion power.

Bring mixture to a boil and reduce by half, stirring frequently.

Pour dressing over salad and toss. Add mushrooms and bacon.

Microwave for 30 seconds to further wilt spinach

Serve immediately

I mixed all of the ingredients in the skillet (the spinach last, of course) to wilt it and coat it nicely with the dressing. Garnished with hard boiled egg for extra protein. photo by LIAatWLLO LIAatWLLO
