| Spice Rub for Chicken |
| 1 teaspoonsbasil; dried |
| 1 teaspoonscumin; ground |
| 1 teaspoonschili powder |
| 1/8 teaspoonscayenne pepper |
| 1/4 teaspoonsgarlic powder |
| 1/8 teaspoonssalt |
| 1 poundchicken breasts |
| Mango Salsa |
| 1/4 cupred onion; diced |
| 1 champagne mango; diced |
| 1/2 cupcucumber; diced |
| 1/4 cupcilantro; minced |
| 1/4 cuplime juice; freshly squeezed |
| 1/8 teaspoonsalt |
| Corn Tortillas |
| 3/4 cupQueso Fresco |
Chicken Tacos with Mango Salsa Preparation
Preheat a gas grill. Meanwhile, mix all the spices in a small bowl. Rub the spice mixture onto the chicken. Place the chicken on the grill and grill for about 5 minutes a side or until chicken is cooked through. Slice chicken into strips.
Meanwhile, mix all the salsa ingredients ingredients together in a medium sized bowl, and let sit for at least 15 minutes at room temperature.
Serve the chicken inside warmed corn tortillas and top with the mango salsa and queso fresco.
