|Spice Rub for Chicken|
|1 teaspoonsbasil; dried|
|1 teaspoonscumin; ground|
|1 teaspoonschili powder|
|1/8 teaspoonscayenne pepper|
|1/4 teaspoonsgarlic powder|
|1 poundchicken breasts|
|1/4 cupred onion; diced|
|1 champagne mango; diced|
|1/2 cupcucumber; diced|
|1/4 cupcilantro; minced|
|1/4 cuplime juice; freshly squeezed|
|3/4 cupQueso Fresco|
Chicken Tacos with Mango Salsa Preparation
Preheat a gas grill. Meanwhile, mix all the spices in a small bowl. Rub the spice mixture onto the chicken. Place the chicken on the grill and grill for about 5 minutes a side or until chicken is cooked through. Slice chicken into strips.
Meanwhile, mix all the salsa ingredients ingredients together in a medium sized bowl, and let sit for at least 15 minutes at room temperature.
Serve the chicken inside warmed corn tortillas and top with the mango salsa and queso fresco.
