This recipe calls for soaking most of the jngredients because it is a healthy way to eliminate Phytic acid, making it easier to digest. It also makes the muffins moist.

Original recipe makes 12 Servings
3/4 cupsmilk
2 Tbsp. olive oil
2 Tbsp. melted butter
1 cupunsweetened coconut (shredded)
1/3 c. honey
2 very ripe bananas
1 tsp.cinnamon
1 tspnutmeg
1 1/3 cflour of choice ( I used whole wheat pastry flour)
1 1/2 tspbaking powder
1 egg
1/2 tspbaking soda
1/2 tspsalt
prepare Muffin tins or use cute papers ;)

combine first nine ingredients in a bowl. cover with towel or loose fitting lid, and let sit overnight. in the morning, stir in remaining ingredients. bake at 325 degrees for 25 minutes.

    I didn't have time to let them soak, but they came out with a muffiny consistency and decent banana flavor. Made mini muffins. Baked 15 mins. Nice for casual Saturday breakfast.
