Original recipe makes 6 Servings
454 gramspasta
½ green pepper – julienne
½ red pepper – julienne
½ yellow pepper - julienne
½ red onion – julienne
4 clovesgarlic – minced
4 ouncesasiago – julienne
4 ouncesprovolone – julienne
60 mlolive oil
45 mlred wine vinegar (or balsamic)
½ lemon (juice)
3 plum tomatoes; chopped
2 tbsporegano
½ cup fresh basil
1/3 cupparsley
3 green onions; slivered
Salt
Pepper
4 ouncesGenoa salami – julienne
4 ouncesprosciutto - julienne

Italian Pasta Salad Preparation

Cook pasta in boiling salted water. Toss with olive oil and spread to cool.

Marinate vegetables and cheese in oil, vinegar, garlic, lemon and herbs for 30 minutes.

Mix with cold pasta. Add salami and prosciutto. Refrigerate.
