Original recipe makes 6 Servings
2 teaspoonsolive oil
1 onion; finely chopped
2 slicescanadian bacon; sliced
1 packagesliced mushrooms
2 largeEggs
2 largeegg whites
1/2 cupfat-free milk
1 cupfat-free ricotta
1/2 teaspoondried thyme
1/2 teaspoonsalt
1/4 teaspoonblack pepper
1 packagefrozen chopped spinach; thawed and squeezed dry

Canadian Bacon, Spinch, and Mushroom Crustless Quiche Preparation

1. Preheat the oven to 375F. Spray a 9-inch glass pie plate with nomstick spray.

2. Heat the oil in a large nonstick skillet and set over medium heat, add the onion and cook, stirring occasionally, until softened 5 minutes. add the bacon and mushrooms and cook, stirring occasionally until the mushrooms are softened and most of the liquid has evaporated.

3. whisk the eggs, egg whites, milk, ricotta, thyme, salt, and pepper in a large bowl until blended. stir in the onion mixture and the spinach.

4. pour into the prepared pie plate. bake until the top is golden and a knife inserted into the center comes out clean, 35-40 minutes. let stand 10 minutes before slicing.
