Original recipe makes 12 Servings
| 1 1/4 cupAll-purpose Flour |
| 1 1/4 cupcorn meal (white or yellow) |
| 2 mediumripe bananas; mashed |
| 3 teaspoons ofbaking powder |
| 1 teaspoonsalt |
| 2 tablespoonsbrown sugar |
| 1 largeegg |
| 3 tablespoonsoil |
| 2 teaspoonsminced fresh ginger |
| 1/4 teaspoonfresh grated nutmeg |
| 1 teaspoonground cinnamon |
Banana Corn Bread Preparation
Pre heat oven to 400 degrees
In medium mixing bowl combine flour, corn meal, baking powder, and salt; mix until even. In another mixing bowl beat egg, then add in mashed banana, sugar, oil, ginger, nutmeg and cinnamon; stir until smooth. Add banana mixture to flour mix; stirring until batter is smooth and even. Pour into greased baking pan. Drizzle honey and cinnamon sugar on top of batter.
Bake for 20 minutes (to make sure bread is done stick a toothpick in the center, bread is done if toothpick is clean when pulled out).
