Ingredients

| 3 tblApple Cider Vinegar |
| 1 tspgrated orange zest |
| 2 tblblood orange juice |
| 2 1/2 tspDijon Mustard |
| 2 tblmaple syrup |
| salt |
| pepper |
| 1/3 cupEVOO |
| Salad: |
| 8 oz.thick cut bacon |
| 8 oz.baby arugula |
| 1 granny smith apple; peeled and diced |
| 1/2 cuptoasted walnut halves; coarsely chopped |
| 1/2 cupdried cranberries |
| 6 oz.blue cheese crumbles |
S Chopped Salad with bacon and blue cheese Preparation
Preheat oven to 400. Place bacon on a rack on a baking sheet and bake for 20 min or until crunchy and just fragrant. Cool.
Toss arugula, apple, walnuts, cranberries and blue cheese.
Whisk dressing, adding EVOO last.
Chop bacon and add to salad. Dress. Don't use all of the dressing! Sprinkle with salt, about 1/2 tsp.
Notes
You might not need to add all of th oil, so taste as you go.
