| 2 tspsalt |
| 1 cupfine quick cooking grits (not instant) |
| 1 1/4 cupshalf and half |
| 2 tblbutter |
| 1 1/2 csharp cheddar cheese; grated |
| 1/2 cupscallions; chopped, white and green |
| 1/2 tsppepper |
| Garnish of grated cheddar and scallions |
V Cheddar Grits Preparation
Boil 4 cups of water in a saucepan. Add salt, and slowly add grits while stirring constantly with a wood spoon. Reduce heat to low, and simmer stirring every once and a while until they thicken, about 5-7 minutes.
Add 1/2 and 1/2 and butter and stir. It will thicken as it cooks, so don't worry if thin. Simmer, stirring occasionally for 45 min. It will become smooth and creamy yumminess. Take off heat, and stir in cheese, scallions and pepper. Garnish with cheese and scallions.
