| 1 smallEggplant; 1 1/2" chuncks |
| 1/2 largeGreen Bell Pepper; cut into 1" peices |
| 1/2 largeRed bell pepper; cut into 1"peices |
| 1/2 mediumOnion; cut into 8 wedges |
| 1 mediumZucchini; cut into 1" peices |
| 1/2 poundWhite mushrooms; whole |
| 2 teaspoonDried basil |
| 1 1/2 tablespoonOlive oil |
| 1 tablespoonRed wine vinegar |
| 1/2 teaspoonDried oregano |
| 1/4 teaspoonSalt |
| pinchBlack pepper |
| 1/2 mediumTomato; seeded & cut into 2" peices |
| 1/4 cupParmesan cheese; grated |
Mixed Roasted Vegetables Preparation
Heat oven to 350?.
Place eggplant, bell peppers, onion, zucchini and mushrooms in a 2 qt casserole. Sprinkle evenly with basil.
Mix oil, vinegar, oregano, salt and pepper, drizzle evenly over vegetables.
Bake uncovered 30 minutes. Add tomatos; toss to coat. Bake uncovered 15 minutes longer or until vegetables are tender. Serve with cheese.
