From Sara Fosters cookbook "Casual Cooking", this is an easy salad to make and enjoy. It is filling enough to be a meal in itself with some crusty bread.
Yield: 4 Servings Ready in 30 minutes

|For the vinaigrette:|
|1 tbspred wine vinegar|
|1 lemon; zested and juiced|
|1 tbspground cumin|
|2 garlic cloves; minced|
|2 tspcapers; drained|
|1/2 tspcrushed red pepper flakes|
|1/4 cupextra virgin olive oil|
|For the Salad:|
|2 canschickpeas; rinsed and drained|
|1 pintcherry tomatoes; halved|
|1 roasted red pepper; loosely diced|
|2 tbspfresh thyme|
|2 tbspchopped fresh parsely|
|pepper; freshly ground|
|3 ozfeta cheese; cut into 1/4" cubes|
Chickpea Salad Preparation
1) Combine vinaigrette ingredients and mix well.
2) Combine salad ingredients. Drizzle with vinaigrette and toss. Enjoy.
