Chickpea Salad
From Sara Fosters cookbook "Casual Cooking", this is an easy salad to make and enjoy. It is filling enough to be a meal in itself with some crusty bread.

| For the vinaigrette: |
| 1 tbspred wine vinegar |
| 1 lemon; zested and juiced |
| 1 tbspground cumin |
| 2 garlic cloves; minced |
| 2 tspcapers; drained |
| 1 tsppaprika |
| 1/2 tspcrushed red pepper flakes |
| 1/4 cupextra virgin olive oil |
| For the Salad: |
| 2 canschickpeas; rinsed and drained |
| 1 pintcherry tomatoes; halved |
| 1 roasted red pepper; loosely diced |
| 2 tbspfresh thyme |
| 2 tbspchopped fresh parsely |
| sea salt |
| pepper; freshly ground |
| 3 ozfeta cheese; cut into 1/4" cubes |
Chickpea Salad Preparation
1) Combine vinaigrette ingredients and mix well.
2) Combine salad ingredients. Drizzle with vinaigrette and toss. Enjoy.
