Chickpea Salad

From Sara Fosters cookbook "Casual Cooking", this is an easy salad to make and enjoy. It is filling enough to be a meal in itself with some crusty bread.

Original recipe makes 4 Servings
For the vinaigrette:
1 tbspred wine vinegar
1 lemon; zested and juiced
1 tbspground cumin
2 garlic cloves; minced
2 tspcapers; drained
1 tsppaprika
1/2 tspcrushed red pepper flakes
1/4 cupextra virgin olive oil
For the Salad:
2 canschickpeas; rinsed and drained
1 pintcherry tomatoes; halved
1 roasted red pepper; loosely diced
2 tbspfresh thyme
2 tbspchopped fresh parsely
sea salt
pepper; freshly ground
3 ozfeta cheese; cut into 1/4" cubes

Chickpea Salad Preparation

1) Combine vinaigrette ingredients and mix well.

2) Combine salad ingredients. Drizzle with vinaigrette and toss. Enjoy.
