Tonarelli al Melone

This is based on a recipe from the cookbook "Marcella's Italian Kitchen", this is an unusual pasta sauce based on cantaloupe. It is unbeatable when the melon is in season and flavorful-- a favorite in our house.

Original recipe makes 4 Servings
4 tbspbutter
1 tbspolive oil
3 cupscanteloupe; diced into 1/4" cubes
1/4 cheavy cream
1 lemon; juiced and zested
1 tbsptomato paste
3 tbspfresh tarragon; finely chopped
3 tbspfresh thai basil; finely chopped (optional)
salt
pepper; freshly ground
1 lbtonarelli pasta or spaghetti

Tonarelli al Melone Preparation

1. Put the butter and oil in a 10" saute pan and melt over high heat. Add the melon, and cook for ~2 min to soften.

2. Add cream, lemon juice and tomato paste. Stir and cook at high heat until the cream is reduced by half.

3. Add salt, pepper, tarragon, thai basil and stir to incorporate.

4. Toss with pasta cooked al dente and enjoy!
