Chicken & Edamame Salad
Original recipe makes 4 Servings
| 4 tablespoonsFresh lime juice |
| 2 tablespoonsFresh cilantro; chopped |
| 4 teaspoonsCanola Oil |
| 1 teaspoonFresh ginger; grated |
| 1 teaspoonSalt |
| 2 cupBoneless skinless chicken breast; cooked & cubed |
| 1 1/2 cupFrozen shelled edamame; thawed |
| 1 smallBell pepper, red; diced |
| 1/4 Avocado; halved, pitted, peeled & diced |
Chicken & Edamame Salad Preparation
Whisk together the lime juice, cilantro, oil, ginger and salt in a large bowl. Add the chicken, edamame, and bell pepper; toss to coat. Add the avocado and toss gently. Serve at once, or cover and refrigerate up to 2 days.
