Creamy Chicken Penne

Ready in 30 minutes

This sounds common, but it tastes nothing like anything I've ever made and it is delicious. Left-overs from this dinner are all mine.

"This was a good recipe but I did add a few things. First off I used a mixture of white and dark meat. When first placing chicken in pan I added salt and pepper to my liking, and then cooked chicken all the way through. then added peppers, garlic, sliced mushrooms, and 1/2 teaspoon of red pepper flakes; cooked for a few minutes. Then I added about half a cup of chicken broth, and let the mixture simmer with lid on until the mushrooms looked cooked through (10 or so minutes.) the rest of the steps I followed as written and it was great! "

Ingredients

1/2 1 lb box penne pasta
2 boneless skinless chicken breasts; chopped into bite size pieces
1 tablespoon olive oil
1/2 red bell pepper; finely chopped
4 cloves Garlic; minced
2 tablespoons butter
1 tablespoon Flour
1 cup milk
4 ounces cream cheese
1/2 cup grated Parmesan
3 green onions; finely chopped
Salt and pepper; to taste

Preparation

1) Cook pasta according to package and drain.

2) Meanwhile, heat olive oil in a large skillet. Cook chicken until done. Turn heat to low - medium; add garlic and red bell pepper and cook for an additional 2 minutes. Remove chicken and peppers from pan.

3) With heat still on low - medium, melt butter in the same skillet. Whisk in flour until smooth. Gradually stir in milk. Add cream cheese and Parmesan. Continue stirring until completely smooth.

4) Turn off heat. Add in chicken, pasta, and green onions. Mix well and serve immediately.

Combine salad and pears and serve with favorite dressing.

Made a large batch of this recipe last night so I just about tripled everything but it came out perfect!!! I thought the cream cheese would be overpowering in flavor bit it wasn't. Also I crumbled some bacon and used cherry tomatoes instead of peppers. Will be making again... It was a hit at the family gathering. photo by Calzonian Calzonian
