"This is so delicious. It sounds so simple and it is, but trust me - you and your family will LOVE it."
"It was very flavorful even though I was missing fresh parsley and instead used dried ones. The only problem was I used long grain rice and it definitely needed more than 20 minutes to cook the rice. It actually took a lot longer so I had to keep adding chicken stock. But will definitely try again with different rice. "- barbaraanneyapana

1) Generously sprinkle both side of chicken with salt and thyme.
2) In a large skillet, heat olive oil over medium heat. Brown chicken on both sides. Remove from pan and set aside.
3) Saute onions and carrots in olive oil until tender. Saute garlic for 30 seconds.
4) Stir in remaining ingredients. Place chicken back in skillet on top of rice. Cover and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.

LMBarnes 1 year agoFor me, the chicken was a bit dry and lacked the flavor I hoped it would have. The rice however was wonderful. I added celery, green and red peppers and some seasoned salt. If I make this dish again, I will probably use dark meat like chicken thighs or maybe even pork chops.

AMcNeal4 1 year agoThis was good. I added some spices to kick up the flavor a bit, yummy!
gothdragon 1 year agoI am giving this a one, because I did as directed, even though I know that you usually you use two cups of fluid to one cup of rice!!!! I did as directed by the instructions, and there is NO WAY that anyone who made this as directed had their rice come out done.............Good idea, but very poorly written and executed! I have never given someone a one star rating..........but this recipe is very misleading and definately does not come out as per the instructions.
Jen85hayden 1 year agoUsed thin breast and it was amazing. The kids had seconds and next time I'll have to double the recipe. There wasn't a single drop left and my kids are very picky at dinner
Maroltk 1 year agoVery good! I am very inexperienced at cooking but made this dish with ease! I added the celery as well which was suggested in another review. Cheers!

jairid 1 year agoWe make this often. I use thin sliced chicken breasts, add celery and use quinoa instead of rice. Easy, healthy and tastes good.
