| 1 tspExtra Virgin Olive Oil |
| 1 tspButter |
| 1 largeOnion; Medium Dice |
| 1 lb.ground hot Italian Sausage |
| 1 cupWhite Wine |
| 1 cupMilk |
| 1/2 cupChicken Stock |
| 1 tspTomato Paste |
| Salt and Pepper to taste |
| Parmigiano Regianno for grating |
Penne con la Salciccia (Penne w/Hot Italian Sausage) Preparation
In a saute pan, heat oil and butter over high heat. Add onion and cook till browned. Add Italian sausage and brown. Deglace the pan with the wine and reduce au sec. Add the milk, stock and tomato paste. Simmer for approximately 15 minutes till the sauce is nape.
As you begin the simmer above, add the penne to boiling water and cook according to package directions. Drain the pasta and add it to the sauce with grated PR cheese. Season to taste.
