A simple yet savory Italian soup that I had tried numerous times at Olive Garden, I decided to mimic the recipe and find this one to be nearly spot-on! I prefer not to add cale, but some find the cale to be a desirable addition to the soup. A very rustic, flavorful, and 'comfort-food' dish!

Ingredients

Original recipe makes 6 Servings
1 lbitalian sausage
1/2 mediumonion
3 clovesgarlic; up to 6
1 canchicken broth; 32 oz.
1 largepotato; up to 3
1 canevaporated milk; 3 oz.
1 pkgshredded cheese

Zuppa Tocsana Preparation

Brown the ground sausage in a skillet, adding minced garlic and diced onions.

In a separate pot, add chicken broth and bring to a boil.

Wash and cut potatoes into slices, then quartering the slices. Leave the skin on! Add to chicken broth and boil until tender.

Combine the sausage mix into the pot with potatoes. Allow to come to a simmer again, then add evaporated milk. (Optional: You may also decide to add about a handful or so of cale leaves at this time.) Stir soup well and allow to simmer for another 10 minutes.

Serve and enjoy!

Garnish with fresh parmesan cheese and bacon bits, and serve with bread sticks or fresh bread!

If sausage seems excessively greasy after browning (more than 10 T of grease) drain most, but not all grease as it can make the soup aesthetically unappealing :) [I posted this recipe.]
