Grilled Salmon with Pineapple, Mango and Strawberry Salsa

Original recipe makes 4 Servings
Olive oil
4 6 oz salmon fillets
seasoning salt & pepper or
blackened spice
3/4 cupdiced pineapple
3/4 cupdiced mango
3/4 cupdiced strawberries
1/4 cupdiced red onion
1 jalapeno; stemmed, seeded and finely chopped
2 tablespoonschopped fresh mint leaves
2 tablespoonsfresh oj
1 tablespoonfresh lime juice
salt & pepper

Grilled Salmon with Pineapple, Mango and Strawberry Salsa Preparation

Brush salmon with olive oil and season both sides. Grill 4 minutes each side.

To make salsa, combine all ingredients and allow to marry for 30 minutes.
