Shire's Lemon Cake Gluten Free Recipe
A great Glutein free cake that tastes better and is much lighter than most Gluten Free desserts!! The almond flour relly helps to elevate this cake!

|1 cupblanched almond flour|
|1/2 cupsweet rice flour|
|1/2 teaspoonbaking powder|
|1/2 teaspoonbaking soda|
|Sea salt; One pinch|
|1 cuplight brown sugar|
|5 Eggs; medium|
|4 oz.light cream cheese (or butter or vegan margarine); softened|
|1/2 cupplain or lemon yogurt|
|2 tablespoonsfresh lemon juice|
|Lemon zest (fine grated peel); 1 fresh lemon|
|1 teaspoonbourbon vanilla extract; or good vanilla extract|
Shire's Lemon Cake Gluten Free Recipe Preparation
Preheat the oven to 350 degrees F.
Using a 9-inch Springform or cake pan butter and line the bottom with parchment paper.
Whisk together the flours. baking powder, baking soda, sea salt and sugar.
Beat the eggs in a large bowl until they are foamy. Mix in the cream cheese and yogurt until combined.
Add in the lemon juice, lemon zest and vanilla; beat to mix.
Slowly add the flour and beat on medium speed for a minute or two.
Pour the batter into the cake pan. Bake at 350 degree F. oven for about 40 minutes. Use the toothpick trick to test for doneness.
Cool on a wire rack. Important cake is cooled before dusting with powdered sugar.
