Original recipe makes 4 Servings
1 27 oz can pinto beans
1 10 oz can of Rotel diced tomatoes and green chi
1 package ofsausage; any kind
1 cup ofminute rice

One Pot Bean Stew Preparation

Cut sausage into bite size pieces and brown on the stove for a few minutes, then add all of the rest of the ingredients to a large sauce pan and simmer on medium high heat for about 10 minutes, stirring occasionally. Serve hot with toast. Tastes great reheated as well!
