Italian Chicken and Grilled Summer Squash Over Angel Hair Pasta

The flavor of this sauce is very summery with the squash and celery and onion flavors in every bite. I used canned spaghetti sauce, but you can use tomato sauce and season it with basil, oregano and a little brown sugar. The cheese on top really makes this a fun dish.

Original recipe makes 8 Servings
1 Zucchini cut in rounds and grilled
1 Yellow squash cut in rounds and grilled
1 Onion diced
1 Celery diced
3 Garlic minced
2 TablespoonsOlive oil
2 TablespoonsButter
1 cupChicken pieces leftover
1 28oz. can Diced Tomatoes
1 smallcan of Spaghetti sauce
Splash; of good red wine
Parmesan; cheese for toppings
Mozzarella; cheese for toppings
Angel; hair pasta or Spaghetti noodles

Saute onion and celery in oil and butter for 3-4 mins. Then add garlic and stir for 1 minute. Add tomatoes with juice and your grilled squash. Bring to a simmer. Add your chicken and your spaghetti sauce. Heat through for 20 minutes to let the flavors blend. In the meantime, cook your noodles al dente. Drain. Plate your pasta and ladle your sauce over your pasta, add the Mozzerella cheese allow to melt on top and top with the parmesan. You can also add some fresh basil at this point.

This dish is very colorful, good and good for you! I used squash picked fresh from the garden and canned tomatoes from last year's garden. Yum!
