Tomato Sauce with Butternut Pumpking and Red Lentils

Tasty tomato sauce enriched with lentils and pumpkin. Lentils are good, cheap source of protein and iron, pumkin is rich in beta-carotene.

Original recipe makes 4 Servings
1 tbssunflower oil
50 gonion; chopped
15 gCelery; chopped
30 gsplit red lentils
110 gButternut pumpkin; chopped
200 mlPassata; or canned tomatoes
150 mlWater
50 gPasta shells; mini
40 gMature cheese; grated

Tomato Sauce with Butternut Pumpking and Red Lentils Preparation

1. Heat the oil and saute the onion and celery for 5 minutes. Rinse lentils and add to the pan. Add pumpkin and saute for 1 minute. Pour in the passata and water. Cover and simmer for 30 minutes.

2. Meanwhile, cook the pasta according to the packet instructions and drain.

3. Remove the pumpkin and lentil mixture from the heat and stir in the cheese until melted. Puree in a food processor and sitr in the drained pasta.

Notes

This is a great recipe when introducing solids - this recipe is suitable from 7 months.
