Original recipe makes 4 Servings
Tomato Sauce with Butternut Pumpking and Red Lentils Preparation
1. Heat the oil and saute the onion and celery for 5 minutes. Rinse lentils and add to the pan. Add pumpkin and saute for 1 minute. Pour in the passata and water. Cover and simmer for 30 minutes.
2. Meanwhile, cook the pasta according to the packet instructions and drain.
3. Remove the pumpkin and lentil mixture from the heat and stir in the cheese until melted. Puree in a food processor and sitr in the drained pasta.
