Full of flavor, perfect for a warm summer night! Serve with warm flour tortillas.
Cut fish into bite size pieces. Combine the first 7 ingredients in a covered ceramic or glass dish. Make sure the lime juice covers the fish. Combine the remaining ingredients in a separate covered dish. Make sure the lemon juice covers the vegetables. Marinate both dishes in the refrigerator for 12 hours.
After 12 hours drain some of lime juice from the fish into a dish and reserve. Combine the contents of the two covered dishes. Taste and adjust the acidity by adding some of the reserved lime juice if needed. Serve with warmed flour tortillas. Great as an appetizer or a delicious light summer dinner.
