Chop red onion and sauté in butter until soft.
Brown the ground turkey (or pork) and drain fat if desired.
Wash red potatoes thoroughly and cut into bite size pieces.
Wash bell pepper and chop.
Combine all ingredients in a 4 to 5 quart slow cooker with potatoes toward the bottom of the pot.
Pour broth over ingredients until everything is just barely covered with liquid.
Set slow cooker on high and allow to cook for 4-6 hours or until potatoes are soft.

katalholt 3 years agoIf you don''t want the chile to be so hot, use less or none of the powdered green chile. Serving suggestion: Serve over blue corn tortilla chips for a classy spin on a frito pie. Sprinkle shredded cheddar cheese on top. [I posted this recipe.]
